My default is the half-hitch cast-on because that is the one I learned with. Having used it for so long, I've learned to deal with looseness issues of the loops -- work as close as possible to the tips, keep your needles as close together as possible and avoid putting your knitting down until you finish the cast-on row. I will frequently use the long-tail cast-on for a small project but once I realized it is really a half-hitch with a worked stitch I often just go back to my default.

Most of my knitting these days are toe-up socks so I like the Turkish or loop cast-on, otherwise I seem to be doing a lot of the crochet cast-on so that my cast-on matches my cast-off.

Many people like the cable cast-on but I don't care for it too much -- not very stretchy.
