Unless your edging has a particular stitch pattern where count is important, many times you can get by with picking up as many, or as few stitches, as you need to make the edging look good. For my cast on and bind-off ends, I try to pick-up one for one since I basically have stitches on top of stitches. For my rows, if it is garter stitch, I pick up one stitch for every 2 rows (or 1 stitch per ridge) and if the edge is stockinette, I generally pick-up 2 stitches for every 3 rows.

If I have a stitch pattern with a particular count for my edging, I might pick-up all my stitches first, and then work a row where I decrease or increase to get the number of stitches I need for the stitch pattern.
