Crochet color work isn't very different.

When working regular small "Fair Isle" type patterns the individual pattern will generally tell you how to execute the color change for a particular stitch. Then you have the option of stranding or working over the unused color. (This is one of those "your preference" options. Try a swatch and see which looks better to you. I usually work over to avoid strands. I don't mind the occasional "peek through" of the opposite color.)

Large color blocks can be worked the same way they can in knitting. You simply drop the old color and pick up the new in the manner directed. Since there is a long stretch to cover, the yarns are dropped rather than floated.
