Using 2 colors of yarn

I saw something in a book indicating that instead of cutting your yarn and adding another color, you can change colors at the end of a row and let the 1st color hang while you do the 2nd row. Then "pick up" the 1st color for the 3rd row (letting the 2nd color hang). Has anyone done this instead of cutting and weaving in later?
