Probably the easiest would be a garter stitch scarf or dish cloth. But here's something that not much more difficult and I think more interesting. []

You will need to know how to do the garter stitch which would be to knit all rows when working back and forth, and you will need to know how to alternate knit and purl stitches to create a rib stitch pattern.
