The small needle stitches will cause this to happen and the yarn and pattern itself also plays a part in curling.
The soft yarns and "Fun yarns " and larger needles work well for me.

A crochet edge on some items works also.
Starching can help , BUT who wants a stiff Scarf.
I trust you find a happy ending to your search.
The edge rows on "Grama's Favorite Dishcloth" make for none curling , it could work on many scarves.
This site has many cloths and check some of the edges.
