Can anyone recommend a free video that shows a simple and easy way to cast on and cast off for beginners.

I suggest taking a look at the videos at www.knittinghelp.com There are many different ways to both cast on and off. Many of the common cast ons are available at knittinghelp. Not sure how much information there is about cast off aka bind off.
